Dark Chocolate Chip Walnut Cookies (gf + df option)

We all search for the best chocolate chip cookie out there. You’ve been there, I’ve been there, the person outside walking on the sidewalk has been there. The interesting thing about the search for the perfect chocolate chip cookie is that there probably isn’t one, and that’s because everyone loves different qualities in their cookies. So here are some tips:

Do you like a chewier cookie? Bake less.

Do you like a crispy cookie? Bake longer.

Do you like a thin cookie? Don’t chill the dough and use more oil.

Do you like a thick cookie? Chill the dough (you can’t overchill - you might even want to freeze if you like a REALLY thick cookie).

The recipe I’ve posted here is what I think captures the perfect mix of crispy on the outside and chewy on the inside. I hope you enjoy it and can find your chocolate chip cookie bliss!

Ingredients:

2 ¼ cups Not Your Mama’s Flour

1 tsp baking soda

1 tsp salt

1 cup melted coconut oil

1 ½ cups coconut sugar

1 tsp vanilla extract

2 eggs

1 ⅔ cups dark chocolate chips

1 cup chopped walnuts

Large flake sea salt 

Steps:

  1. Preheat the oven to 375°F. 

  2. In a small mixing bowl, mix together flour, baking soda, and salt. Set aside.

  3. In a large mixing bowl, beat together the melted coconut oil and coconut sugar.

  4. Add the vanilla extract and eggs, beat together.

  5. Pour the flour mixture into the large mixing bowl and beat until combined into a batter.

  6. Fold in the chocolate chips and walnuts.

  7. Scoop the batter using a tablespoon onto an ungreased baking sheet (can line with parchment paper if you want). Sprinkle sea salt on top of each cookie.

  8. Bake the cookies for about 10 minutes. If you need to bake in batches, chill the dough in the fridge inbetween scooping each batch.
