Pumpkin Chocolate Chip Blondies (gf + df)

Get ready world, pumpkin season is here and I am here for it. Today with blondies! These pumpkin chocolate chip blondies are everything you need - thick, dense, chewy on the inside, sweet, and filled with that pumpkin goodness we all crave come fall, plus an intense amount of dark chocolate packed in there.

Ingredients:

1 ½ cups Not Your Mama’s Flour

1 tsp baking powder

½ tsp salt

¾ cup light brown sugar, packed

2 eggs

1 tsp vanilla extract

⅓ cup coconut oil, melted

¼ cup pure maple syrup

1 ¼ cups pumpkin puree

1 ½ cups dark chocolate chips or chunks

Steps:

  1. Preheat the oven to 375°F. 

  2. Line a 12x7-inch pan (or similar size) with parchment paper.

  3. In a medium bowl, mix together the flour, baking powder, and salt with a whisk. Set aside.

  4. In a separate mixing bowl, whisk together the brown sugar, eggs, vanilla extract, coconut oil, maple syrup and pumpkin puree. 

  5. Next, add the dry ingredients to the wet mixture and whisk until smooth.

  6. Fold in the chocolate chips.

  7. Pour the batter into the pan and spread evenly with a spatula.

  8. Bake for 35-40 minutes. Once done, let cool before slicing.
