Arugula Walnut Pesto

So here’s the deal…I love pesto (obvi), but sometimes I don’t like how it’s so heavy and oily. Insert this arugula pesto. It is super light and fresh and delicious! It has an interesting spin too because instead of basil, it is packed with arugula. The arugula gives it a nice, almost peppery taste. I threw in walnuts for flavor, healthy fats and protein as well as avocado for creaminess. I also added the nutritional yeast for a super subtle cheesy flavor without the dairy! If you don’t know what nutritional yeast is, Google it and then go buy it asap.

I should also mention that this recipe is so simple – there’s really just one step! Enjoy!

*makes 2 cups

Ingredients:

4 cups packed baby arugula

¾ cup walnuts

⅓ cup olive oil

2 Tbsp nutritional yeast

4-5 cloves of garlic

⅓ cup water

Juice of 1 small lemon

½ avocado

Steps:

  1. Place all ingredients in a food processor and process until combined and completely smooth.
  2. Serve on brown rice pasta!
