Apple Cinnamon Waffles (gf + df)
Waffles have always been a favorite breakfast of mine, so I decided to put a little seasonal spin on my classic recipe for fall! Apple picking is a fall tradition I love, so my fridge is basically always stocked with fresh apples this time of year and that makes me get a little creative about how I use them!
In this recipe, the waffles are packed with grated apple which adds a delicate apple flavor to every bite. The goodness doesn’t stop there though, because then I top these babies with a super flavorful apple cinnamon syrup to finish off a decadent breakfast.
The recipe takes just 30 minutes to make, and I can promise the extra little effort is worth it! Enjoy!

Waffle Ingredients:
2 eggs
1 ¾ cups almond milk (or other dairy/non-dairy milk)
½ cup coconut oil, melted
2 cups Not Your Mama’s Flour
4 tsp baking powder
1 tbsp coconut sugar
¼ tsp salt
1 apple, grated
Apple Syrup Ingredients:
2 apples, peeled and chopped
2 tbsp coconut oil
¼ cup 100% pure maple syrup
1 tsp cinnamon
Steps:
First, heat up your waffle iron. I have a belgian waffle iron which I love, but any type will do!
Next, prepare the apple syrup. Chop the apples and saute in a saucepan on medium heat with the coconut oil for 5 minutes. Add the maple syrup and cinnamon, and simmer on low while you make the waffles.
To prepare the waffles, mix the eggs, almond milk and melted coconut oil in a large mixing bowl. Set aside.
In a medium mixing bowl, mix together the flour, baking powder, coconut sugar, and salt. Pour this mixture into the large mixing bowl with the wet ingredients.
Whisk until you have a smooth batter.
Fold the grated apple into the batter.
Finally, cook the waffles according to your waffle iron’s instructions.
Top with the apple syrup and dig in!!
