Fluffy Belgian Waffles (gf + df)

To me, waffles taste like home. When I was growing up, my family always made a special sweet breakfast on the weekend and waffles were in heavy rotation. When I first decided to go gluten free, I rarely attempted making my own waffles because I thought it couldn’t be done. I had tried GF waffles at restaurants and they always tasted grainy or just fell apart immediately. Over the years, with much trial and error and a lot of learning about GF baking, I realized this huge feat of creating a delicious and fluffy GF waffle was just mental. In reality, GF waffles are one of the simplest things to make if you use the right combo of ingredients.

These waffles amaze me every time I make them. They’re moist on the inside, slightly crisp on the outside, have an amazing flavor, and don’t fall apart easily. Not to mention, they are dairy free and made with two of my favorite, most nourishing flours – almond and oat. They’re packed with protein, complex carbs, and fiber. Make these once and there’s a high chance it’ll become your weekend routine, too. Promise.

*serves 5

Ingredients

1 cup almond flour

1 cup oat flour

4 tsp baking powder

½ tsp salt

1 tsp xanthan gum

1 tbsp coconut sugar

1 ¾ cups unsweetened almond milk

2 eggs

½ cup grapeseed oil or melted coconut oil

Toppings: fresh fruit, 100% pure maple syrup

Steps:

  1. Preheat your waffle iron.

  2. In a medium mixing bowl, combine all ingredients and whisk until a smooth batter forms.

  3. Scoop enough batter into the waffle iron for one waffle at a time (about 1/5 of the batter makes 1 Belgian-style waffle).

  4. Serve immediately with your favorite toppings – mine are sliced bananas and pure maple syrup or honey!
