Banana Dark Chocolate Chunk Cupcakes (gf + df)

Fluffy banana cake goodness, dark chocolate chunks, mounds of frosting. Now that’s what I need in my life. 

These cupcakes are like little clouds of deliciousness and I’m so excited to share the recipe! It makes my heart so happy when I can share a simple recipe that is so delicious, but also so wholesome. That’s right. I just called a cupcake wholesome.

These babies are only sweetened with natural, unrefined sugars. They’re dairy-free and gluten-free. They’re made with my signature gluten-free flour blend, Not Your Mama’s Flour, which is filled with good-for-you grains, nuts and starches (you can purchase here!). And people say dark chocolate is good for your heart, right? Idk that’s what I tell myself.

The Secret GF

Ingredients:

2 cups Not Your Mama’s Flour

1 cup coconut sugar

1 tsp baking powder

1 tsp baking soda

½ tsp salt

3 overripe bananas

2 eggs

2 tsp vanilla

½ cup coconut oil, melted

¼ cup almond milk

8 oz dark chocolate bar

1 batch of your favorite frosting - I like using Simple Mills vanilla frosting

Optional: cacao nibs to sprinkle on top

Steps:

  1. Preheat the oven to 350°F. Line a cupcake tin with 18 cupcake wrappers.

  2. In a small bowl, mix together the dry ingredients (Not Your Mama’s Flour, coconut sugar, baking powder, baking soda, and salt). Set aside.

  3. In a medium mixing bowl, smash the bananas. Whisk in the eggs, vanilla, coconut oil, and almond milk.

  4. Add the dry ingredient mixture to the banana mixture in the medium bowl. Whisk until smooth.

  5. Chop the chocolate bar into uneven chunks - I like to have a mix of big and small pieces.

  6. Fold the chopped chocolate into the batter.

  7. Divide evenly among the cupcake wrappers, filling each a little over ¾ full.

  8. Bake for about 18 minutes, or until a toothpick inserted in the center comes out clean.

  9. Once done, let cool in the muffin tin. When the cupcakes are cool enough to handle, you can move them to a wire rack to cool completely.

  10. Lastly, frost with your favorite frosting and sprinkle cacao nibs on top for a little extra something special. Enjoy!
