Fudgy Brownies with Chocolate Frosting (gf + df)

You will NEVER believe what this frosting is made out of. Are you ready? Okay here it goes…AVOCADO! I know – crazy stuff. It’s creamy, rich, chocolatey, and overall just amazing.  The brownies themselves are incredible too. I have a pro tip for you – while the brownies are delicious just out of the oven, they are even more amazing after being chilled in the fridge. They transform from a good brownie that’s just a brownie to something that is super rich and incredibly fudgy.

Ingredients:

⅔ cup coconut oil

5 oz unsweetened baking chocolate

1 ¾ cups coconut sugar

2 teaspoons vanilla extract

3 eggs

1 cup Not Your Mama’s Flour

1 cup chopped walnuts

1 avocado

½ cup agave

¼ cup cacao powder

Steps:

  1. Preheat the oven to 350⁰F. Grease a 9x9-inch baking dish with coconut oil.

  2. Melt the coconut oil and chocolate in a pan over low heat, stirring frequently. Cool while preparing remaining ingredients.

  3. Using an electric beater, beat the sugar, vanilla, and eggs on high speed for 5 minutes. Slowly add the chocolate and coconut oil mixture and beat until incorporated.

  4. Slowly beat in flour until combine and stir in the walnuts.

  5. Pour batter into the baking dish and bake for 35 minutes, or until a toothpick comes out clean.

  6. Cool the brownies before frosting.

  7. To make the frosting, blend together the avocado, agave, and cacao powder until smooth.

  8. Spread frosting on the brownies and store in the refrigerator.
